Squid Ink Tortellini with tomato & lemon Sauce
STANDARD RECIPE CARD Amount Unit Ingredients Prep Method 200 gms squid ink pasta dough see recipe 50 gms fresh cooked crab meat no shell 50 mls basic tomato sauce see recipe 2 each lemons cut into cheeks 20 gms gemolata see recipe 16 pieces basil leaves crispy fried
METHOD: 1 roll pasta dough through a pasta machine until it forms one large thin sheet. 2 place pasta sheet onto a floured bench and cut 20cm disks with a metal cutter. 3 Place a small amount of crab meat into the middle of the disks. 4 fold the disks in half to make half moon shapes, then fold and twist into tortellini shapes. 5 for the sauce. 6 Heat the tomato sauce in a small sauce pan until simmering. 7 season to taste with lemon juice, sea salt and black pepper. 8 cook the tortellini in boiling salted water for 6 minutes or until soft. 9 place the sauce in the middle of a large plate, place the cooked and drained tortellini on top 10 Garnish with gremolata, lemon cheek and crispy basil leaves. 11 serve hot.
